Kathy B Knight, PhD, RDN, is registered dietitian nutritionist and certified weight management specialist. Dr. Knight is a native Mississippian who earned the baccalaureate degree in Biology from the University of Mississippi and completed her doctoral studies at Auburn University in Auburn, Alabama. Building upon a community nutrition and basic science background, her research centers on adult and pediatric weight management, especially with regards to the prevention of childhood obesity through school-based nutrition interventions. Other research interests include the development of nutrition outreach and farm-to table culinary programs and wellness program development and evaluation.
