David H. Holben, PhD, RDN, LD, FAND, is registered dietitian nutritionist and former commissioned officer in the United States Army Reserves Medical Specialist Corps. Dr. Holben completed his doctoral studies at The Ohio State University, Columbus, Ohio. Building upon a clinical nutrition and basic science background, his research focuses on food insecurity and health outcomes of individuals in North America. Exploring the relationship of diabetes, obesity, and other conditions to food access across the lifespan and optimizing solutions for food access and security to promote health and wellness are of particular interest.Faculty

Anne K. Bomba, PhD, teaches courses in human development. Dr. Bomba completed her doctoral studies at Oklahoma State University in Stillwater, Oklahoma. Building upon a social sciences background and early childhood classroom teaching, her research focuses on environmental influences on child development. Recent research focuses on breastfeeding practices and what children are eating in child care settings.

Teresa C. Carithers, PhD, RDN, LD is a registered dietitian and nutritional epidemiologist. Dr. Carithers completed her doctoral studies in Preventive Medicine at The University of Mississippi Medical Center in Jackson, Mississippi. Her current research focus areas include nutrition policy evaluations, child nutrition, and cultural based health research including extensive research with the Jackson Heart Study.

Kathy B Knight, PhD, RDN, is registered dietitian nutritionist and certified weight management specialist. Dr. Knight is a native Mississippian who earned the baccalaureate degree in Biology from the University of Mississippi and completed her doctoral studies at Auburn University in Auburn, Alabama. Building upon a community nutrition and basic science background, her research centers on adult and pediatric weight management, especially with regards to the prevention of childhood obesity through school-based nutrition interventions.  Other research interests include the development of nutrition outreach and farm-to table culinary programs and wellness program development and evaluation.

Laurel Greenway Lambert, PhD, RDN, LD, is a registered dietitian nutritionist and food systems management specialist. Dr. Lambert completed her doctoral studies at the University of Southern Mississippi in Hattiesburg, Mississippi. Building upon a healthcare and child nutrition background in foodservice management, her research focuses on child nutrition programs such as the National School Lunch and School Breakfast Programs and school wellness policies addressing the school nutrition environment.

Mary “Emmy” Parkes, MS, RDN, CDE, is a registered dietitian nutritionist and certified diabetes educator. Ms. Parkes completed her graduate studies at the University of Southern Mississippi in Hattiesburg, Mississippi. Since 2015, Ms. Parkes has served as the Director of the Didactic Program in Dietetics. She continues practicing as an RDN/CDE by seeing clients in the Ole Miss Nutrition Clinic and by consulting with Aseracare Hospice in Senatobia, MS.

Mary G. Roseman, PhD, RDN, LD, CHE is a registered dietitian nutritionist and certified hospitality educator. Dr. Roseman has a MBA and completed her doctoral studies in Food Systems Management at Oklahoma State University. Building on nearly 20 years of industry experience with an international quick service restaurant company and as a university assistant foodservice director, her research focuses on consumer perspectives and behaviors regarding food consumption and healthful eating practices in restaurants, schools, senior centers, and homes. Her research exploration includes topics such as restaurant nutrition labeling, ethnic foods in restaurants, foodservice and dietary practices and interventions in K-12 schools, functional food usage in family eating patterns, and food safety practices of university students and seniors. Her research also includes employee and management/supervisor perspectives and behaviors in the foodservice work environment regarding food safety, restaurant appearance and cleanliness, product quality, error management, and communication.

Tanya Maren Ruetzler, PhD, teaches a variety of hospitality management courses with the primary focus in foodservice operations. She is also a Certified Hospitality Educator (CHE). Dr. Ruetzler completed her doctoral studies at the University of Southern Mississippi in Hattiesburg, Mississippi. Building upon a nutrition and hospitality management background, her past research focused on cross-cultural perceptions of foodservice operations. Currently, she is working on two other areas of research including undergraduate hospitality management competencies desired by industry recruiters and factors that influence purchasing behaviors of beer and wine.

Mrs. Varnell completed her Masters in Education Administration at Texas A&M University in Commerce, Texas. Building upon a home economics and education administration background, her interests focus on developing relationships with hospitality industry professionals with the intent of promoting the hospitality management program.
